• 1/3 cup whole wheat flour

  • 1/2 tsp baking powder
  • generous sprinkle of cinnamon
  • pinch salt
  • 1 egg, large
  • 1/4 cup milk
  • 1/2 tsp vanilla
  • 1 tsp vegetable oil
  • 1 medium ripe banana, mashed

Pancake Pandemonium is back and in full force! I have been getting a lot of requests from my famous single serving pancake recipe and people wondering if I am going to make any other recipes. Well I am listening and I have put together this delicious single serving, fluffy, banana pancake recipe. I hope you all enjoy this as much as my previous pancake recipe! Feedback is welcome. Directions:

  1. In a small bowl, whisk together flour, baking soda and powder, cinnamon, and salt.
  2. In a medium bowl, whisk together egg, milk, banana, oil, and vanilla.
  3. Using a whisk, stir dry ingredients into wet ingredients until just combined. Do not overmix. Batter will be a bit lumpy.
  4. Preheat a fry pan over medium heat. Spray lightly with cooking spray. Or if you have a griddle that works best – I usually have my heat set at 350 degrees.
  5. Pout 1/3 cup of batter onto hot pan (or griddle). Cook until bubbles form on surface.
  6. Carefully flip the pancake over and cook other side until golden brown. This will only take about a 1-2 minutes.
  7. Repeat with remaining batter.
  8. Serve hot with extra banana slices and pure maple syrup!
