• Package of Whole Wheat Rotini Pasta
  • 4 tablespoons of Ricotta Cheese
  • 2 teaspoons of parsley
  • 1 tablespoon of pesto
  • 1/2 cup of cherry tomatoes, halved

I was looking for something quick and easy to make the other night. I went into the pantry and grabbed some rotini pasta, knowing that I wanted pasta, I had some ricotta cheese that I needed to use up and some pesto. After making this dish I realized that the possibilities are endles in terms of what you can add to this. You can add some basil instead of the parsley or throw in some bacon and peas. Instead of ricotta you could use parmesan, but I feel that ricotta is not used a lot in plain pasta recipes such as this one. I would love to hear what you do with the dish, share your thoughts!

Directions:

  1. Bring a large saucepan of salted water to boil and cook the pasta according to the directions of the package.
  2. When the pasta is done, reserve a full cup of cooking water.
  3. Drain the pasta and return it to the saucepan.
  4. Stir in the ricotta, parsley, pesto and cherry tomatoes. If it looks dry stir in some of the cooking water.
  5. Serve hot and season with salt and pepper (to taste).
