We are drawing near to Spring and Summer. I put this together the other day as a quick meal and thought to myself this would be great for a side dish for a picnic or a large party. It is still great as a main dish, simple and easy to make. You can try other types of sausages to add more flavor to the dish, sweet or hot, whatever your heart desires.

Directions:

  1. Preheat oven to 400 degrees F.
  2. Place cut potatoes in medium saucepan; cover with water. Bring to a boil; reduce heat. Simmer 10 minutes or until crisp- tender. Drain potatoes.
  3. Combine sausage, potatoes, peppers, onion in a large bowl.
  4. Whisk together garlic, chicken broth, olive oil and seasonings then pour over and toss- then transfer the mixture to the pan in a 13×9-inch pan; mix lightly. Take lemon and squeeze over the dish.
  5. Bake for 30 minutes or until potatoes are lightly browned and vegetables are tender. For crispier potatoes, bake 10 to 15 minutes longer.
