We are drawing near to Spring and Summer. I put this together the other day as a quick meal and thought to myself this would be great for a side dish for a picnic or a large party. It is still great as a main dish, simple and easy to make. You can try other types of sausages to add more flavor to the dish, sweet or hot, whatever your heart desires.
Directions:
- Preheat oven to 400 degrees F.
- Place cut potatoes in medium saucepan; cover with water. Bring to a boil; reduce heat. Simmer 10 minutes or until crisp- tender. Drain potatoes.
- Combine sausage, potatoes, peppers, onion in a large bowl.
- Whisk together garlic, chicken broth, olive oil and seasonings then pour over and toss- then transfer the mixture to the pan in a 13×9-inch pan; mix lightly. Take lemon and squeeze over the dish.
- Bake for 30 minutes or until potatoes are lightly browned and vegetables are tender. For crispier potatoes, bake 10 to 15 minutes longer.
